One delicious, gut-friendly recipe we can all enjoy is this nourishing Sweet Potato, Chilli & Coconut Soup. It’s packed with gut-healing ingredients that help support digestion, improve nutrient absorption, and enhance recovery. Plus, it’s quick, easy, and absolutely delicious!
Ingredients:
- 1 red onion
- 1 white onion
- 2 teaspoons curry powder
- 3 sweet potatoes
- 2 garlic cloves
- 2 vegetable stock cubes + 1 pint of water
- Coconut block (or coconut milk)
- 1 teaspoon lazy chilli
- A handful of kale (cooked in the air fryer with oil and sea salt)
Method:
- Peel and chop the sweet potatoes, onions, and garlic.
- Sauté the onions in olive oil until soft.
- Add garlic and cook for 1 minute, then add the sweet potatoes.
- Add water to cover the veggies and stir in the stock cubes; simmer for 20 minutes.
